We use fresh, handpicked spices like star anise, red chilies, cinnamon, and the rare kalpasi (black stone flower), which are roasted and ground in-house to release their full aroma. These spices form the backbone of our signature dishes, from the Chettinad kozhi curry, where chicken is marinated in freshly ground pepper and curry leaves, to varuval, a dry-roast dish where the flavors of the spices are toasted to perfection.

One of our signature dishes, Chettinad Pepper Chicken, showcases how locally grown spices and farm-fresh ingredients elevate a simple chicken dish into something extraordinary. Slow-cooked to tender perfection, the chicken is marinated with black pepper, garlic, and ginger, creating a bold and aromatic curry. Another favorite, kuzhi paniyaram, is a traditional snack made from fermented rice and lentils. Served two ways—savory with chilies and onions or sweet with locally sourced honey—these bite-sized dumplings carry the warmth of wood-fire cooking and the comfort of home.
